Crazy Good Tex Mex Kitchen Sink Recipe

That looks like an awful bowl of garbage. It’s not…it’s Tex Mex. If there is anything we Texan folks have pinned down, it is good bar b que and good mexican food. I am posting this crazy little recipe I made up one day out of sheer starvation and based on what I found in the pantry-which was kind of everything but the kitchen sink thrown in to a large dutch oven. Turns out, it’s pretty freakin’ awesome, super easy to make, gluten free, and can be made vegetarian by subbing the chicken for tofu, and eliminating the dairy. (I have a super secret though…homescratch chicken bone broth is really what makes it so fantastic, and I always stay well stocked to help my fam get through the cold and flu season). However, I am sure you can use store bought and still walk away with good results. This takes a whopping total of 15 minutes to throw together and about 1 hour to cook. Crazy good. Crazy healthy. You’ll want seconds. Grab the chips, it’s go time.

This is a large batch recipe-will feed about 8 or you can freeze the leftovers for another night.

What to Buy at the Store:

2 cans chopped/shredded chicken

4 cups of brown rice

8 cups of chicken broth (homemade is better-recipe coming soon)

2 cans kidney beans (undrained)

1 can of rotel or diced tomatoes (undrained)

Approx. 1 cup of frozen corn or 2 cans of yellow sweet corn

Seasoning:

1-2 tablespoons of each:

Chili powder, Garlic powder, Onion powder, Cumin

1/2 teaspoon of cayenne pepper

Salt & Pepper to taste

Garnishments:

Cilantro

Lemon/Lime juice

Shredded Cheese

Sour Cream

Avocado

Nutritional Yeast (for vegan version)

Chopped purple onion

Tortilla chips

Favorite salsa

In a large dutch oven ( 8 quart), mix all ingredients & seasonings in together, stir until well mixed. Bring to a boil. Cover and reduce to medium low. Cook until rice is done, approximately 40-55 minutes. Remove from heat. Stir mixture-should be just slightly moist.

 

 

Garnish with toppings, serve hot with a side of tortilla chipsbrandiclaussen

For the vegetarian version-replace chicken with tofu & remove dairy toppings. Use nutritional yeast in lieu of cheese. This is the simplest, I am in a big hurry healthy meal you could possibly throw together.
